Peking Duck
Since I had quite a bit of extra money still available for the month, I decided to buy two raw ducks in Chinatown. The first of which I decided to try cooking Peking duck style. This involved hanging the duck in wind for over 10 hours to let the skin become dry and taut. It was a bit unsettling working with an entire raw animal; its much easier to deal with a pre-partitioned piece of meat. But once it was cooked, I was more comfortable handling it even with the head on. With some of the duck fat, I also whipped up a dish with Chinese chives, hot green pepper and pork. Wook should have more pictures of the duck actually being served. I have another duck that I planned on preparing earlier, but then I came down with a cold and spent the last two days living on orange juice, oatmeal, and tea. Looks like I'll have leftovers from feb challenge in March.
